• 4 tomatoes (I used on the vine)
  • 1 head of lettuce
  • 1 onion (I used sweet)
  • 1 lb ground turkey
  • 1 tbsp oil (I used grape seed)
  • 4 tbsp water
  • 1 tbsp sweet paprika
  • 1 tsp cayenne pepper
  • Juice of 1 1/2 lemon
  • pinch salt
  • farmers cheese to taste (omit if on Paleo)
  • cheddar cheese, grated (omit if on Paleo)

I had a craving for Mexican food yesterday as we walked by a neighborhood restaurant. I love Mexican food, but there was nothing healthy at that place. Not even the salads. I wanted to enjoy the flavors without feeling guilty about the food, so I came up with this easy-to-make and mouthwatering recipe.

Chop up the onion and saute with the oil, water, paprika and cayenne for 4 minutes on a medium temperature.

Add the turkey and the juice of 1 1/2 lemon.

Mix it in.

Cook for about 15 minutes on a medium temperature, until the turkey has cooked through and the liquids have evaporated. Mix it from time to time.

While the turkey is cooking, chop up the tomatoes, and place all ingredients (tomatoes, lettuce, cheese) in bowls to serve when the turkey is ready. Make sure you taste the turkey so you can salt it more or  further spice it up if you like it more on the hot side.

Now comes the fun part: making your own taco. Some people prefer to eat this with a silverware as if it were a salad. Others enjoy fun messy experience.
