- FOR THE SKEWERS
- 1 cup of oyster mushrooms
- 1/2 cup shiitake mushroom caps
- 1/2 cup broccoli florets
- FOR THE PEANUT SAUCE
- 2 heaping tablespoons peanut butter
- Juice of a half lemon
- 3 tablespoons water
- 1 tablespoon honey
Think game day or when you have people over. You need dips and skewers! I want to share with you a really easy recipe that you can make in under an hour and that tastes delicious.
All you need to do is get the mushrooms and broccoli on the skewers. There are no rules on how to do it. I chose to do oyster mushrooms on one skewer and shittake mushrooms and broccoli on another. It takes about 10 minutes to put the vegetables on the skewer. Preheat the oven t 350F degrees before you start
Place the skewers on a baking sheet lined with parchment paper. Brush each skewer with a bit of olive oil and add a dab of salt.
Bake for 30-40 minutes, until the skewers look cooked.
As the skewers are cooking, prepare the peanut sauce. Combine all ingredients together. You can do it manually or use a blender.
When the skewers are done, plate them with the peanut sauce and enjoy!
Note: as a variation on these ingredients, you can also use onions, zucchini, carrots, peppers or any other vegetables that you like.
