• 2 1/2 tbsp honey
  • 1/4 cup coconut oil
  • 2 tsp vanilla extract
  • 1 1/2 cup almond flour
  • 1 tbsp cocoa powder
  • 1/2 teaspoon baking soda
  • 1 pinch sea salt
  • 1/4 cup cocoa nibs
  • 1/4 cup raisins

The hurricane is here. I still have power, but it blinked a few times already. We are on the 11th floor. The windows – although shut – are buckling quite a bit. Chocolate cookies just seemed like a good idea. I still had cocoa nibs from my trip to the supermarket yesterday, so I tweaked the Cocoa Nib & Raisin recipe for a different version.

Combine all ingredients together.

Then scoop out the batter with a teaspoon and roll into small cookies (they will expand.)

Bake at 350 F for about 10 min. It is that easy!
