- 1 cup almond flour
- 4 heaping tbsp sunflower seed flour
- 1 shallow tbsp matcha green tea powder
- 1 tsp baking soda
- 3 tbsp water
- 5 tbsp honey
These are fabulous green tea cookies! Perfect not only for vegans, gluten-free, paleo or SCD dieters, but also for anyone who loves the taste of matcha green tea. Green tea is very rich in antioxidants, but that is not why I drink it. I enjoy the bitter-sweet after taste of matcha green tea. If you do too, you will enjoy this recipe.
I personally enjoy having these cookies as a snack or after meals.
Turn the oven to 350F. Mix all the ingredients together. At first, it will seem that the mixture is too powdery. Just keep pressing with the spoon and mixing, and it will bind together. This is a vegan recipe, so you can taste along the way and add more honey if you want it sweeter than what I am suggesting.
Line a baking sheet with parchment paper and make your cookies. I chose to make them less even and more rustic-looking, but the shape is up to you! Bake for about 10 minutes or right before they start to golden. The time will vary from oven to oven. The first time I made this recipe, I cooked for 8 minutes and my husband loved that they were slightly under cooked in the center. Because this is a vegan recipe, undercooking is not something you need to worry about.
These cookies are even more delicious when they first come out of the oven as they are really soft. Wait a minute or so before tasting so you don’t burn your mouth!
