• 1/4 cup cashews
  • 1/4 cup water
  • 1 cup spinach
  • 1 garlic clove (optional)
  • 1 cup artichoke hearts
  • juice from 1/2 lemon

So the SuperBowl is tomorrow and my mind is on Game Day foods. Finger foods are a must – but the challenge is how to make them tasty, yet healthy. What I am about to share with you looks very green, but it is not guacamole! It is a spinach artichoke dip that packs in a lot of taste, but will not contribute to your cholesterol levels. There is no sour cream or mayonnaise.

You’ll need the following ingredients: cashews, water, spinach, artichokes, lemon and garlic.

First, blend in the cashews and the water. It should look like pale white milk.


Add the spinach.


Then add the artichokes, the lemon juice and the garlic. The garlic will give it a zing. You can skip it if you are not a garlic person.


This dip works great with vegetables like carrots or butternut squash chips.



If you can’t do without the dairy, I suggest adding a bit of farmer’s cheese.
