• 2 avocados
  • 1 bag frozen fruit
  • 2 tbsp honey (to taste)
  • honey to drizzle
  • 1/2 cup crushed nuts
  • 1-2 tbsp dried fruit

When my brother was a child, he refused to eat fruit and vegetables. My mother had to be really creative to hide vegetables in what he ate. One example was a chocolate pudding dessert that used cocoa powder and avocados. My mom had discovered that avocados absorb the taste of other things mixed with it. I wanted to share a variation of this idea that I came up with, inspired by my mother’s creativity. Try this delicious parfait for breakfast or dessert.

Ingredients for Berry Parfait

You’ll need 3 ingredients for the base: avocados, honey and frozen berries. If you want to have it with “granola”, you can also add crushed nuts and dried fruit. I used Brazil nuts, cashews and almonds combined with unsweetened raisins and cherries.



Blend the avocados, the honey and berries in a food processor or high potency blender until you get a smooth consistency.

Berry Parfait

You can eat it as is, or you can decorate a glass and add the granola. Use your creativity to decorate it. If you have a clear glass, you can create layers for the parfait. Here is an example: start by drizzling honey on it.

Decorate the glass


Then add a layer of the avocado-berry mixture.

Add the mixture to the honey


Add the granola.

Assemble the Berry Parfait

Keep adding layer after layer until you get to the top.

Note – the recipe will yield 2-3 glasses like the above. This berry parfait is very filling. The above is good for two servings.
