• 1 head of cauliflower
  • 1/4 cup chopped onions
  • 3 garlic cloves, chopped
  • 1/5 cup olive oil
  • Salt to taste
  • Chopped chives or green onions to garnish (optional)

Mashed potatoes are many people’s favorite side. When you’re doing  SCD cooking or don’t want all of those calories, creamy SCD cauliflower puree is the perfect substitute! You can achieve a creamy and velvety texture without the starch from potatoes or the lactose from milk. I brought this dish to my sister-in-law’s Thanksgiving dinner a couple years ago, and it was a big hit.

First, steam the cauliflower for 15-20 minutes. If you can run a fork through the cauliflower, it is ready!

While the cauliflower is steaming, saute the onions and the garlic for about 5 minutes on a medium temperature or until they soften up. Note: I used green onions, both the green and the white part, but any onions will do.

Transfer the cauliflower to a bowl to cool down for about 5-10 minutes. Once it has cooled a bit, add it to the blender with the olive oil and work the blender for a minute on high or until it’s achieved a velvety consistency.

Blend the cauliflower

Add the garlic and onions and blend.

The garlic and onions will disappear, but the flavor will be there. Salt to taste.

Serve with your favorite protein.
