- 1 1/2 tbsp honey
- 1/4 cup coconut oil
- 2 tsp vanilla extract
- 1 1/2 cup almond flour
- 1/2 teaspoon baking soda
- 1 pinch sea salt
- 1/4 cup cocoa nibs
- 1/5 cup raisins
We have a hurricane warning. The weather is expected to hit us on Monday, and grocery stores were crowded today. As I browsed the aisles to stock up on food, I found cocoa nibs. Of course, cookies came to mind first. I decided to pair them with raisins to balance out the taste of the cocoa nibs.
Nothing like watching a movie while eating a soft cookie that just came out of the oven. The scent of fresh-baked cookies will fill your house. These are super easy and quick to make.
First preheat the oven to 350F. Then mix all the ingredients in a bowl. First the wet (honey, coconut oil and vanilla extract) then the dry (almond flour, baking soda and sea salt), then the solid ones (cocoa nibs and raisins.)
Then scoop out the batter with a teaspoon and roll into small cookies (they will expand.)
Bake at 350 F for about 10 min or until they are golden brown. It is that easy!
