No one likes to give up what is good, but we all want to make smart choices. For those days when you want delicious and yet nutritious options for your side dishes, try this ‘rice’ made with cauliflower. I met a very wise woman at a dinner party, who told me she made ‘rice’ out of cauliflower. Imagine that. One serving (100 grams) of cauliflower ‘rice’ has about 25 calories versus 370 for white rice. I tried it myself and wanted to share with you.

First, cut the cauliflower into medium chunks. Put it through a food processor on low speed for a few seconds until the cauliflower turns into small grains. Depending on the size of the cauliflower and your food processor (I’m using a hand blender here), you may have to do it a few times.

Put the grains in a non-stick pan, add about a half cup to a cup of water and cook on a medium low temperature for 15-20 minutes until it achieves the desired level of doneness. If you are using a metal pan, you might want to add a teaspoon of oil as well so it doesn’t stick to the bottom. Stir from time to time so the “rice” cooks evenly. Salt to taste.

Sprinkle fresh parsley on top and serve with your favorite protein.
