- - 4 tbsp almond flour
- - 2 tbsp honey
- - 1 tbsp Chivas Regal 12
- - 1/3 tbsp baking soda
- - Dab salt
- - 2 tbsp raisins
I confess, I have a sweet tooth. However, I don’t always have sweet treats laying around the house. This afternoon I wanted something sweet in a pinch, and decided to make my 7 minute cookies. They take 7 minutes to bake plus 5-10 to make, depending on how fast you are.
This recipe contains whisky as I had a bottle that I wanted to test. Hence it’s not SCD-friendly. Since I like the taste of whisky, I wanted to use it. For a 100% SCD compliant recipe, omit this ingredient.
First, mix in the almond flour, whisky and honey.
Then add the baking soda and salt.
Lastly, add the raisins.
Line a baking sheet with parchment paper. Roll the cookies into small balls and place them on the baking sheet.
Bake them at 350F until they have golden a bit. My oven does the job in 7 min, but depending on your oven, it could be from 5 to 10 min.
When the cookies came out, they had the texture of miniature scones. Good to eat on their own or with coffee or a cup of tea!
